The red varietal 2019 Ignios Orígenes Baboso Negro was produced with the grape known as Alfrocheiro Preto in Portugal, from a plot planted in 1997, the same one Pérez has used since 2011. In the low-yielding 2019, he only produced two 228-liter barrels from one hectare of vines. The destemmed grapes fermented in stainless steel with indigenous yeasts, and the wine matured in two oak barrels for 12 months. It has moderate alcohol and ripeness and very good acidity. For Pérez, Baboso Negro is the king of red grapes, and the wine has some pungent medicinal aromas and an herbal touch. It has a medium body and some dusty tannins. Only 570 bottles were filled in January 2021.
