Description
Guiborat Téthys Grand Cru Extra Brut is an exceptional champagne that stands out for its purity and elegance. Made exclusively from 100% Chardonnay, this Blanc de Blancs comes from a meticulous selection of grapes from the Grand Cru Villages of Cramant, Chouilly and Oiry. The main vintage comes from the current year, complemented by 32% of reserve wines, blending vintages from as far back as previous years, which adds complexity and depth to the wine.
Winemaking
The production of Guiborat Téthys Grand Cru Extra Brut follows a careful process that begins with alcoholic fermentation in stainless steel tanks, followed by malolactic fermentation. Subsequently, the wine matures on fine lees for 7 months in the same tanks, before being bottled for secondary fermentation. This champagne rests on the lees for 22 months, culminating in a slight addition of sugar of 1.5 g/l (Extra Brut) to balance its profile.
