Guiborat's NV Extra-Brut Prohibition is produced from vines in Mardeuil planted between 1964 and 1968, and the latest release, based on the 2019 vintage, was disgorged in February 2023. Bursting with aromas of freshly baked bread, nectarine, mirabelle plum and spices, it's medium to full-bodied, fleshy and pillowy, with racy acids and a chalky finish. It's the most immediate wine in the range.

Guiborat Prohibition is a champagne distinguished by its purity, elegance and meticulous attention to detail at every stage of its production. Originating from the Vallée de la Marne, in the picturesque village of Mardeuil, this Blanc de Noirs is made entirely from Pinot Meunier grapes from vineyards dating from 1954 to 1960, reflecting the richness and history of the terroir from which they come. The decision by Richard Fouquet, the visionary behind this champagne, to concentrate exclusively on making Chardonnay champagnes in 2012, took an interesting turn in 2017 when he decided to explore the potential of Pinot Meunier, giving life to the Prohibition cuvée.

Winemaking

The winemaking of Guiborat Prohibition follows a rigorous process that begins with the selection of the must from the first three pressings, ensuring only the highest quality for fermentation. This must, sourced exclusively from a single vintage, ferments in a combination of stainless steel tanks (87%) and 400-litre oak barrels (13%), a practice that adds complexity and depth to the champagne's profile. Malolactic fermentation is intentionally omitted to preserve the natural acidity and freshness of the wine. The champagne then matures on fine lees for 7 months before being bottled for secondary fermentation, where it rests on rhyme for 36 months. This long ageing period contributes to the complexity and structure of the champagne, which is completed without the addition of sugar after disgorgement and is classified as Brut Nature.
