I also tasted the still unbottled 2021 Grimalt/Caballero, which was resting in tank to be bottled after having matured in one 600-liter barrel and a 225-liter one. It follows the path of the 2020, with purity, elegance and subtleness, perfume and a fine-boned palate. The wine feels relaxed and subtle, with the aroma of the Mediterranean landscape in spring, floral and fresh, with red berry fruit and aromatic herbs. Right now, the wine is amazing; it could even surpass the already phenomenal 2020.

Description
Grimalt & Caballero wine is a unique expression of Mallorcan viticulture, a testimony to the passion and art of winemaking. This wine is the result of the collaboration between Francesc Grimalt and Sergio Caballero, founders of the 4kilos winery in Mallorca.
Winemaking
Grimalt & Caballero is mainly composed of the Callet variety, with 90%, complemented by 10% of Fogoneu. These autochthonous grapes grow on two small estates located at an altitude of about 100 metres above sea level, on clay-loam soils. Vinification is carried out in a simple manner, using indigenous yeasts, reflecting the "less is more" philosophy of the wine. The wine is aged in new French Allier oak barrels for 14 months, which contributes to its complexity and elegance.
Taste
Grimalt & Caballero stands out for its freshness, floral and spicy character and remarkable elegance. It has a bright ruby colour. The nose is very aromatic, with floral and spicy notes predominating. On the palate, it reveals itself as a very elegant and balanced wine, intense but somewhat light, with very fine tannins. Its flavours are spicy, sharp, precise and clean, with a lot of tension and a perfect texture. The finish is long, clean and concentrated. This flavour profile positions it as one of Spain's best Mediterranean reds.
