Description
Frédéric Cossard' s story is that of an iconoclast. Coming from the wine trade, he left the margins of the business to go into the vineyard, determined to make wines that do not hide their origin. In Mercurey, in the Côte Chalonnaise, he found a small plot on clay-limestone soils, with Pinot Noir vines about 30 years old, organically farmed. This is where Frédéric Cossard Mercurey Les Vignes Blanches was born, a red wine with a misleading name that is committed to minimal intervention and a radically honest expression of the terroir.
Winemaking
The continental climate of Mercurey, with its marked temperature fluctuations, allows for slow and precise ripening. The grapes are harvested by hand and the bunches are vinified whole, without destemming, in order to preserve structure and freshness. Maceration lasts three weeks, followed by gentle pressing to preserve the juicy character of the Pinot. Ageing is the true hallmark of the wine: one year in qvevris, Georgian-style buried clay amphorae, which allow subtle and continuous oxygenation, without external interference. The wine is bottled unclarified, unfiltered and without added sulphites.
Taste
From the glass, Frédéric Cossard Mercurey Les Vignes Blanches displays a fresh and ethereal profile, dominated by aromas of red cherry, wild raspberry and dried petals, intertwined with spicy notes, a light floral trace and a fine clay minerality. The palate is juicy and agile, with clean, direct fruit, polished tannins and a light but persistent passage. The ageing in amphorae gives it a satiny, enveloping texture, with a long, saline and earthy finish, without excessive weight. A lively, restless wine that breathes purity and conveys the raw energy of the place. A pure vision of Pinot Noir: free, sincere, unadorned.
