Description
A light breeze is born in a plot of Aligoté in Puligny, in the heart of Burgundy, more than forty years old. Frédéric Cossard, a craftsman of natural wine, decided to give life to this pétillant naturel without artifice: no disgorging, no filtering, no make-up. He wanted to bottle the pure energy of the chalky soil, the freshness of the continental climate and the raw identity of this often underestimated variety. Frédéric Cossard La Chassornade is a declaration of principles: minimum intervention, maximum expression. Frédéric Cossard recalls the exact moment when the idea was born - a particularly luminous vintage, where acidity vibrated in the flesh of the grapes - as a signal to make a sparkling wine that would not tame that liveliness, but enhance it.
Winemaking
Frédéric Cossard La Chassornade is made with Aligoté from a single plot of old vines. After spontaneous fermentation in stainless steel tanks, it is bottled with some of its natural sugars and undergoes a second fermentation in the bottle in the ancestral style. It is not disgorged, so the lees remain present, adding texture and complexity. Turbidity is part of its identity. No added sulphites, no fining or filtering: a living, changing wine that evolves in every glass.
Taste
Visually cloudy, with an opalescent golden hue, Frédéric Cossard La Chassornade reveals its artisanal character. On the nose, it shows fresh notes of lemon, lime, green apple and a background of wet chalk and sea salt. There is a subtle note of sourdough, recalling its ageing on lees. On the palate, it is dry, sharp, with vibrant acidity and fine bubbles. The finish is saline, clean and very refreshing. It has an electric energy that awakens the senses. Ideal as an aperitif, or with seafood and raw fish. It is not a celebratory sparkling wine, it is a wine of territory, of character, of essential purity.
