There's more freshness and some citrus notes in the 2023 El Hombre Bala Albillo Real, in a slightly cooler year, when the wine has better balance and a little more alcohol (13.5%) but a sensation of more freshness and balance. In 2023, they noticed an improvement in their own vineyards (which represent around 50% of the volume, the rest are from local growers) after five years working organically (but not yet certified; they are in the process). They have increased the volumes here to 12,483 bottles. It was bottled in May 2024.

Description
Hombre Bala Albillo Real is a biodynamic white wine that stands out for its freshness and bright acidity. Produced in the Vinos de Madrid Denomination of Origin, this wine is made for Uvas Felices in collaboration with the Comando G winery. The grape variety used is 100% Albillo, a choice that reflects the uniqueness and personality of the Sierra de Gredos wine region.
Elaboration
The winemaking process begins with a selection of old vines, over 60 years old, located in Cadalso de los Vidrios, Madrid. These vineyards are located at an altitude of between 900 and 1000 metres above sea level, on granitic soils. A respectful agriculture is practised, following organic and biodynamic parameters. The grapes are harvested by hand at the optimum moment of ripeness.
In the winery, the Albillo grapes are macerated for 24 hours in cold storage. Afterwards, the whole bunches are pressed and the resulting must ferments spontaneously with indigenous yeasts for three weeks. The wine finally rests in used French oak barrels for 6 months, a process that contributes to its complexity and character.

Hombre Bala Albillo Real is characterised by an aromatic profile that includes delicious fruity aromas and hints of orange peel. On the palate, it presents itself as a very fresh and direct wine, with a bright acidity. This acidity, together with its body and dense texture, makes it an exceptional and distinctive wine. The combination of freshness, acidity and fruity aromas make El Hombre Bala Albillo Real a wine that wins fans and reflects the essence of its terroir.
