Description
Jean-Marc Dreyer created Dreyer Finisterra Macération as a wine that goes beyond the varietal boundaries of his Origin series. Inspired by a personal trip to Fisterra in Galicia - where the harsh landscape, salty fog and Atlantic wind left a sensory imprint on his senses - he decided to make an orange wine that would capture that sense of the frontier. To do so, he brought together Gewürztraminer, Pinot Gris, Muscat d'Alsace and Auxerrois in a joint maceration that is unusual in Alsace. The result is a wine that pays homage to both the blend and the land, made from biodynamically farmed grapes on clay-limestone soils, with no added sulphites.
Winemaking
Each variety destined for Dreyer Finisterra Macération is harvested by hand and fermented spontaneously with indigenous yeasts after a maceration of 7 to 8 days with the skins. This phase extracts colour, texture and aromatic complexity, without reaching tannic excesses. Then all the varieties are blended, and the wine rests for three months in neutral tanks, without clarification or filtration, maintaining all its lively energy. No sulphites are used, and cellar intervention is minimal: the must sets the pace.
Taste
To the eye, Dreyer Finisterra Macération is a subtle amber colour, with orange reflections. The nose displays aromas of orange peel, dried apricot, white flowers, fine honey, ginger and a slight earthy echo. There are also notes of stone fruit, beeswax and mild spices. The palate is enveloping, with clean acidity that adds tension and balances the wine's medium weight. The tannins are elegantly present, like a breeze of black tea that adds texture rather than harshness. The finish is long, with a memory of fresh herbs and wet stone. Dreyer Finisterra Macération is a vibrant, tactile orange wine, where every sip seems to tell a story.
