The very young and pale white 2025 Murmuri was produced with 90% Garnacha Blanca and 10% Macabeo from Poboleda and La Morera de Montsant. The bunches were selected on the sorting table and pressed in a pneumatic press, then the juice fermented in stainless steel with neutral yeasts and without malolactic. Then it was kept with the lees and had weekly bâtonnage for three months. It's tender, young and primary on the palate, fruit-driven and balanced, with 13% alcohol and 5.3 grams of acidity. 16,332 bottles were produced. It was bottled in February 2026.

Description

In Poboleda, in the heart of the Priorat, Mas Doix decided to listen to what almost nobody bottled: the fresh whisper of the hillsides. Thus was born Doix Murmuri, a white wine that looks at the llicorella (slate) without falling into opulence. The Doix family cultivates with a fixed idea: to respect the slope and read the landscape before intervening. They say that one of their bravest decisions was to harvest earlier and earlier, when the village is still asleep, to capture the natural tension of the grapes. In this corner of contrasts -Mediterranean days and continental nights- freshness is earned with patience. The coupage is pure white Priorat: Garnacha Blanca ( 90%) and Macabeu (10%), from 10 to 25 year old vineyards, mostly planted on clay-limestone soils with 25% of llicorella slate.

Winemaking

At Doix Murmuri, the grapes are harvested by hand in small boxes and meticulously selected. Afterwards, a gentle pressing in a pneumatic press extracts the free-run juice, which ferments in stainless steel tanks at 16ºC to preserve aromas and precision. After alcoholic fermentation, the wine is protected to prevent malolactic fermentation, maintaining its clear acidity profile. Ageing takes place on the lees for 3 months, with lees stirring, refining texture and volume without losing nerve.

Taste

In Doix Murmuri, aromas of pear and crisp apple give way to notes of fennel, restrained white flowers and a trace of Mediterranean herbs (thyme, sage). The palate is mineral, tense and clean: fine citrus, a sensation of wet stone and a subtle salinity that lengthens the finish. A white wine from Priorat with energy and elegance, ideal for pairing with fish, rice dishes and Mediterranean cuisine.
