Description
David Duband embodies a Burgundy that takes its origins with the utmost seriousness. The family winery was founded in 1965, but it was David who, from 1991 onwards, decided to stop selling his grapes and instead bottle his own vision of the vineyard. His approach is based on organic viticulture, respect for the vine, and a very clear philosophy: the wine should speak of the terroir rather than the technique. David Duband Gevrey Chambertin, made from Pinot Noir, hails from the Côte de Nuits, where a continental climate and limestone soils imbue the wine with that mineral, firm and deeply Burgundian character. Here there is no gratuitous exuberance, but rather precision, tension and a somewhat austere nobility that defines the character of Gevrey Chambertin.
Winemaking
The winemaking process follows a very recognisable approach for David Duband Gevrey Chambertin: intervening with sensitivity so as not to obscure the wine’s terroir. The wine is vinified using a high proportion of whole bunches, a decision that brings energy, spicy complexity and a livelier structure. Fermentation is carried out gently, prioritising subtle extraction over power, and after pressing the wine rests in tanks to settle gently. It then spends around 14 months in oak barrels, combining new oak with barrels of varying ages, and finishes with a few more months’ refinement in vats before bottling. The result does not seek the heaviness of the wood, but rather its ability to bring the wine into balance and give it depth without detracting from its clarity.
Taste
On the nose, David Duband Gevrey Chambertinis both serious and expressive, with crisp red fruit – wild strawberry, raspberry and redcurrant – enveloped in notes of undergrowth, delicate spices, dried herbs and a very elegant stony undertone. On the palate, it starts off juicy, but its true character soon emerges: upright, precise, with fine tannins and a granular texture, and a fresh acidity that stretches the wine and fills it with vigour. There is crisp red fruit, a very subtle floral hint and an earthy, mineral tension that sustains the entire palate. This is neither a soft nor a complacent Pinot Noir, but a Gevrey Chambertin with vigour, depth and a noble austerity that makes it particularly seductive.
