Description

On the northernmost margins of the Ribeira Sacra, where the Miño River meanders between impossible slopes and the granite emerges naked among the roots of old vines, Pedro Rodríguez(Guímaro) and Raúl Pérez (yes, that Raúl Pérez) decided to join forces to rescue a forgotten, almost inaccessible plot of land. They called it A Boca Do Demo -the "mouth of the devil"-, not for marketing, but because reaching it requires vertigo, strong legs and an almost spiritual conviction in the heroic vineyard.

There, in soils of slate and decomposed granite, old Mencía vines cling to life, dotted with other ancestral varieties such as Brancellao, Mouratón and Garnacha Tintorera, all goblet trained, all pampered without chemicals, only with infusions of horsetail and copper in homeopathic doses. The estate, facing north and at a moderate altitude, retains the Atlantic freshness like a well-kept secret. The Ribeira Sacra, already extreme in itself, becomes almost monastic in A Boca do Demo, a place where time is diluted between morning mists and golden sunsets over the stone.

Raúl and Pedro, two figures who could have followed more comfortable paths, decided instead to go for the difficult, for the authentic. The result is a Galician red wine that does not seek to please, but to move.

Winemaking

The grapes are harvested by hand in small boxes, of course. There is no other way to access these slopes. Once in the winery, the clusters of Castro Candaz A Boca Do Demo ferment with stems and indigenous yeasts, in small open vats, with no temperature control. There is no invasive technology or stainless steel. Everything is gravity, intuition and waiting. Extraction is minimal, infusion rather than maceration, always seeking to express the verticality of the Galician terroir rather than the varietal muscle.

After spontaneous malolactic fermentation, Castro Candaz A Boca Do Demo rests for one to two winters in used French oak barrels, without racking, without aggressive sulphites, without make-up. It is bottled without fining or filtering, preserving every last bit of its character. The whole process follows an ethic of minimal intervention, as if the wine had been made on its own, although nothing is left to chance.

Taste

The first contact with Castro Candaz A Boca Do Demo is almost ethereal, a subtle fragrance of wild violets, sour cherry and wet earth that opens slowly, as if the wine is sizing you up before showing its true face. There is no artifice, no over-extraction, no easy sweetness. What there is is tension, nerve, a restrained energy that speaks of granite, mist and old vines that have withstood decades of neglect.

On the palate, Castro Candaz A Boca Do Demo reveals a vibrant, almost electric, but perfectly integrated acidity. The palate is light, but with unexpected depth: red plum, bay leaf, pure minerality, like sucking on a hot stone after the rain. The tannin is firm but delicate, more reminiscent of a young Nebbiolo than a standard Mencía. The finish is long, dry, with a subtle salinity that cleanses and refines the palate.

It is not a wine for crowds or for those looking for fruity exuberance. It is a declaration of principles, a raw and honest interpretation of the most extreme Galician landscape. Castro Candaz A Boca Do Demo is like a quiet conversation with the land: you have to get close, listen, and let yourself be carried away.
