Augalevada Mercenario Tinto is a fruity and juicy wine, product of the processing of Caiño longo, Brancellao, Caíño da terra, Espadeiro and Sousón grapes.
These grapes were treated under biodynamic agriculture, following the philosophy of the winery of origin, thus achieving the natural expression of the fruit, without adding chemical elements that alter the flavour or aroma of any variety.
The subtlety of its flavour differentiates it from other wines from the same winery, and even though it is a red wine, it maintains its lightness in the mouth, balancing acidity and volume in a perfect way.
Augalevada Mercenario Tinto is made using biodynamic techniques that guarantee the naturalness of the wine. This is why, from the harvest to the bottling process, we try to minimise the intervention of the fruit or the addition of chemicals.
After the harvesting process, a large percentage of the crop is kept whole and the rest is gently crushed to extract the must. It is then macerated for 26 days in open barrels.
Alcoholic fermentation is the next phase, and is carried out with indigenous yeasts, and then aged for 7 months, using large barrels for 70% of the wine, and the rest to age in 400 litre amphorae.
Augalevada Mercenario Tinto is a wine with a high level of acidity, but balanced with the influence of fruity and herbaceous tones. It also has a touch of minerality that brings freshness to the palate.

Augalevada Mercenario Tinto is a wine with authentic tones in its flavour, but at the same time it can be classified as subtle and fluid in the mouth. It is ideal to pair with appetizers, cold meats, some legumes, smoked foods and red meats.
