The village red from La Orotava 2020 7 Fuentes was produced with Listán Negro and 5% Castellana Negra from up to 25 different vineyards, mostly from the center and east of the valley where the grapes are mostly red, with vines ranging between 10 and 200 years old at altitudes of 300 to 700 meters on different soils, all volcanic but with more or less clay, silt and sand. It fermented with 10% full clusters in concrete with indigenous yeasts and matured for eight months, 70% in concrete and 30% of the volume in used 500-liter oak barrels, then it was blended and kept in stainless steel until bottling. It has moderate alcohol, 12.65%, and mellow acidity. 2020 was a warm year with a very early harvest and good yields after a small crop in 2019. This is herbal and a little reductive, with a polished palate and fine tannins. 58,000 bottles produced. It was bottled in July 2022.

Description
7 Fuentes is the largest production wine at the Suertes del Marqués winery. It is a wine characterised by its complexity, coming from at least 35 plots with vines that are between 10 and 180 years old.
It is made from two varietals, Listán negro grown in Cordón Trenzado and Tintilla from the Bocanegra plot in the Espaldera system.
Winemaking
Like all the wines of this winery, the 7 Fuentes begins its elaboration with the harvesting process which is carried out manually in boxes of 16 kilograms.
For the vinification process, at least 90% of the fruit is destemmed and fermented with indigenous yeasts. This process is carried out in concrete vats without temperature control.
The wine is aged for approximately 11 months, with 60% of the fruit being placed in concrete and the rest in used barrels. After this process, the wine is blended and then aged for 6 months in steel vats.
Taste
As this wine comes from several vineyards that are between 10 and 200 years old, which are also located at altitudes ranging between 300 and 700 metres above sea level, it is usually classified as an "ultra volcanic" wine, i.e. with a smoky nuance.
It has aunique and rare aroma where the woody flavour does not predominate, but you can taste the likely acidity of crisp, ripe fruit. The silkiness also characterises it, and you can taste a particularly fine flesh.
A complex and profound wine that brings freshness to the palate.
Undoubtedly, this is a wine with complexity that brings a hint of freshness on the palate, which in turn becomes harmonious and elegant. It is ideal for pairing with red and white meats and desserts that include fruit and chocolate.
