Ramón Saavedra is in charge of creating one of the most natural wineries in Andalusia: Bodega Cauzón. With his roots anchored in Cortes y Graena, a small municipality near Granada (Spain), on the north face of the Sierra Nevada, Ramón left his hometown to travel. He worked for 15 years as a cook on the Costa Brava in Catalonia, before returning to where he was always happy and helping to preserve local traditions.
Ramón Saavedra's vineyard
His father started out as a farmer on this land, growing a bit of everything. He planted a hectare of wine, which at first was not made to sell, but to drink. When Ramón returned, he bought another hectare, and little by little it grew. His vineyards are between 1,000 and 1,200 metres above sea level. Although the region is hot and dry, this altitude provides cool nights, which help the balance and acidity of the fruit.He founded Bodega Cauzón in 1997, and today owns five hectares. He grows a variety of grapes: garnacha, garnacha tintorera, syrah, tempranillo, pinot noir, cabernet sauvignon, merlot, viognier, torrontés and sauvignon blanc. The soils are sandy and stony, alluvial, rich in iron oxide. Ramón refuses to add anything other than natural components. No pesticides or herbicides. The grapes are harvested by hand and he trusts in nature and the power of his vineyard, which is why he grows each plot dry.
Wines of Ramón Saavedra
He produces around 10,000 bottles a year, without any kind of additives, prioritising maximum respect for the environment. In the winery, it ferments spontaneously with indigenous yeasts in stainless steel tanks. The ageing is carried out in oak barrels. His wines are different, unmistakably his own. 100% quality wine. Ramón wants the tannin to be sweet, elegant, neither aggressive nor green. He wants to find that acidity, so representative of Cauzón wines.- ;
