The 2021 Volaina ('butterfly' in Catalan language) wants to showcase the delicacy and freshness of the Mediterranean variety Parellada from vines at 500+ meters above sea level in the Pla de Manlleu. It's part of a project to investigate and spread the importance of butterflies as pollinators and food for other spices. 2021 was a very good year, but it was the beginning of the drought and therefore with low yields. They do not irrigate, and they lost 35% of the normal yields this year. It comes from two vineyards from two growers, both on limestone soils, and it fermented in stainless steel, where the wine matured for six months. It's serious, a little shy, nuanced and insinuating. I like the harmony of the wine, which is subtle and light, clean and delicate but with density. This has only 9.5% alcohol and a pH of 3.17 with 4.9 grams of acidity. There is a transparency and ethereal quality and faintly floral profile in this wine from a variety that tends toward reduction. 10,300 bottles produced. It was bottled in June 2022.

Description
Volaina is a young white wine made exclusively with the Parellada variety by the Celler Credo winery in the Penedés DO in Spain.
The Parellada grapes come from two completely organic vineyards located in the municipality of Aiguamúrcia in the town of Pla de Manlleu, in the Penedès region and are located 500 metres above sea level.
The grapes for this magnificent wine come from a vineyard cultivated following the principles of organic and biodynamic agriculture for the preservation of the ecosystem.
Winemaking
The grapes are harvested by hand and a precise selection of the grapes is made to guarantee their excellent quality. In the winery, fermentation is carried out with its own yeasts in stainless steel tanks at a controlled temperature.
Subsequently, to give the wine finesse and structure, it is bâttonaged for one month and aged in stainless steel tanks on fine lees for 6 months.
Taste
Volaina is a white wine with a floral, herbal expression, mineral notes and citrus reflections on the nose. In the mouth it is fresh, light, with persistent nuances of fruit, very good acidity and a fine bitter finish. It is a wine to enjoy at any time.

Volaina is a white wine that represents respect for the identity, the territory and the landscape produced by the Celler Credo winery.
It is also an alliance with the farmers of the Penedés region who work in sustainable agriculture and supports the Catalan Butterfly Monitoring Scheme project to study butterflies (volainas) as bio-indicators, hence its beautiful name.
In gastronomic terms this wine is perfect as an aperitif and is ideal with Asian cuisine, grilled vegetables, baked white fish and smoked meats.
