Description
Terroir al Límit Roc d'Aubaga is an exquisite representation of the rosé wine of the Terroir al Límit winery. This wine has been made in the Burgundy style and has undergone an ageing process in earthenware jars. The result is a wine of great finesse, complexity and fluidity, which reflects the expression of the different terroirs with which the winery works. As for its varieties, it is made from 80% Garnacha Blanca, 10% Garnacha Gris and 10% Garnacha.
Winemaking
Terroir al Límit Roc d'Aubaga is vinified in the same way as the red wines, carrying out a co-fermentation of the three varieties. All the grapes are used without destemming and are emptied into the tanks to avoid air accumulation. Once fermentation has begun, there is no mechanical interaction, allowing the grapes to ferment gently and slowly. At the end of fermentation, the grapes are pressed, eliminating all the sugar so that the second fermentation can begin without the skins.
Taste
Terroir al Límit Roc d'Aubaga stands out for its aromas of red currant, wild rose and hibiscus, which flow into a subtle but lush palate of wild cherry and creamy berries. There are also notes of watermelon rind, cherry stones, rose hips, tea leaves, well-defined minerality, fresh acidity and a long finish. Technically, it is a claret, a blend of red and white grapes, making it an ideal rosé for all seasons, shining especially when paired with richer duck dishes, as well as grilled fish or flavourful raw dishes.
