I tasted the white 2021 Quíbia very early after bottling, and as has happened other times, I found it very reductive and sulfury (and the screw cap doesn't help); but experience tells me the wine shows better one or two years later. This was produced with 70% Giró and the rest Callet and Prensal. It's only 12.5% alcohol and has a fresh and light palate with some austerity and a dry finish. Hold it for one more year. 32,000 bottles produced. It was bottled in February 2022.

Description

The white wine Quíbia is a singular and elegant wine, made from a careful selection of native Mallorcan varieties. This wine is made from a blend of 60% Premsal Blanc and 40% Giró Ros.

Elaboration

The production of Quíbia begins with the manual harvest in small 10 kg boxes, starting at the end of August with the Giró Ros and continuing in early September with the Premsal.
After the harvest, the grapes undergo a 12-hour cooling process and two selection stages: one on a berry sorting table and the other by optical selection berry by berry. The grapes undergo short macerations and very gentle pressing. Alcoholic fermentation is carried out in stainless steel tanks at 17ºC, using indigenous yeasts that give the wine greater typicity. Each grape variety is fermented separately and, after ageing for three months on its own lees, the final blend is made.

Taste

The taste of Quíbia is distinguished by its freshness and elegance. Thanks to the ageing on lees and the use of indigenous yeasts, the wine has a well-defined varietal profile. The predominant flavours include notes of white and citrus fruits, complemented by a subtle minerality that gives it additional depth. The balance between the total acidity of 5.7 g/L and a pH of 3.26, together with an alcohol content of 12.5%, results in a harmonious and refreshing wine. These characteristics make Quíbia a versatile wine, ideal to accompany a variety of dishes or to enjoy on its own on a special occasion.
