The 2023 Pegaso Granito was selected from two plots in the Robledillo lieu-dit, a total of three hectares at 900 meters above sea level on pine tree forest on granite soils, as the name indicates, with some more silt that retains humidity. The two plots fermented separately—all the plots in the winery ferment and age separately—and the blend is done at the end. It fermented destemmed, mostly in stainless steel and a small part in an oak vat and some plastic bins, and the aging was in used barrels of different sizes, from 400 to 600 liters for one year without racking, trying to keep the tension of the wine. It was kept for eight months in stainless steel after blending the components before it was bottled. It's a little shy and austere but opened up nicely with time in the glass to elegant and subtle aromas, very harmonious, floral and with notes of Mediterranean herbs. It has a very fine palate, ripeness without excess, great balance and integration of all the components. 6,100 bottles produced. It was bottled in July 2025.
