Description
L'Ermot is a white wine made exclusively from Macabeo grapes by the Celler La Salada winery in the region of Catalonia.
The vineyards from which the grapes used to make L'Ermot were grown by Toni Carbo's grandfather over 70 years ago on a north-facing hillside in Subirats.
This vineyard was planted on clay-limestone soils and has never been treated with herbicides or pesticides, that is to say, it is treated in an organic manner.
Winemaking
The grapes are harvested by hand and transported in 10 kg boxes, with selection of the grapes in the vineyard. In the winery, the Macabeo variety is gently pressed for 24 hours and left to ferment with its spontaneous yeasts in stainless steel tanks. Subsequently, it is aged on its fine lees for five months in stainless steel tanks with no added sulphur.
All the work in the winery, including bottling, is done without fining, without filtering, without adding SO2 or any other product and is carried out according to the lunar calendar.
Taste
L'Ermot is a single-varietal Macabeo, from a single vineyard, which seduces the nose with herbal and fruity touches. On the palate it is very fresh, discreet, gentle, with a tremendously seductive simplicity and moderate acidity. A deep, mineral and vibrant Macabeo.
