The young 2024 Mencía has 15% other varieties, 80% from the Sil River and 20% from the Miño River, and a pale color and perfumed nose, finer and more elegant than previous years. It has contained ripeness and 12.5% alcohol and a light- to medium-bodied palate with almost unnoticeable tannins. 100,000 bottles produced. It was bottled in April 2025.

Description
Pedro Rodríguez, the soul behind Adegas Guímaro, does not make wine: he cultivates memory. From his childhood among the vertiginous vineyards of Amandi, in the Ribeira Sacra, he learnt from his parents -Manolo and Carmen- that on these hillsides you don't improvise. With just a few tools and a lot of willpower, his family sold wine in bulk in demijohns to the village canteens. But in 1991 they decided to bottle, and in 1996 they were among the first to join the newly created Ribeira Sacra appellation. The name Guímaro - which means "rebel" in Galician - is a nod to that courageous decision to resist the abandonment of heroic viticulture.
Guímaro Mencía is composed mostly of Mencía, with small proportions of local varieties such as Brancellao, Caiño and Marenzao, from old vineyards planted on slate (slab) soils facing south, just above the Sil River. This orientation, together with the Atlantic climate with continental influences, results in grapes of slow ripening, marked acidity and mineral expression.
Winemaking
The harvest for Guímaro Mencía is carried out by hand, respecting the rhythm of each plot. The grapes are fermented with indigenous yeasts in stainless steel tanks, without corrections, without clarification and with minimal filtration. The wine rests for 8 months on its lees, gaining texture without losing freshness. Only a small dose of sulphur is added at bottling. The vinification process is transparent, letting the vines speak, not the winery.
Taste
In the glass, Guímaro Mencía is sober and direct. Aromas of sour cherry, raspberry and fresh blueberries intertwine with hints of wet slate, cold earth and a faint trace of wild violets. The palate is linear, with bright acidity and fine tannins. The red fruit is crisp and precise, wrapped in an austere minerality that dominates the whole. The finish is clean, with a slightly herbal and saline aftertaste. An Atlantic mountain wine, rebellious and sincere, which does not seek to embellish, but to excite from its purity.
