The perfumed and showy 2023 As Xaras is a varietal Mencía from Val do Bibei with more grapes from additional vineyards and some more Albarello. It fermented with full clusters and aged in well-seasoned 500-liter French oak barrels and an ancient 3,000-liter oak foudre. This is very primary, juicy and fruit driven. It has moderate alcohol (12%), a medium body and a chalky sensation. It's still young but shows very good balance and freshness. 14,000 bottles were produced. It was bottled in May 2024.

Description
Fedellos Do Couto As Xaras is a red wine made from Mencía grapes from two vineyards located on the banks of the Jares River, where granite and schist soils with quartzite predominate.
It is a velvety textured wine classified as an elegant and tasty red wine. It is defined by experts as smooth and juicy, with particular aromas and flavours, capable of conquering even the most demanding palates.
Winemaking
Fedellos Do Couto As Xaras is a wine made from an exclusive treatment to the fruit, understanding that the viticulture applied in these vineyards is defined as heroic.
After the grapes from both vineyards are cultivated, they are harvested by hand, ensuring that they arrive at the winery in whole bunches. Then the fermentation phase begins at low temperatures, without adding yeast or other products that alter the natural process of the fruit.
After this process, the wine is aged for 12 months in old French oak barrels, using various sizes of barrels and demi-muids.
Taste
The As Xaras wine is a cherry-red coloured red wine of medium depth, with an intense fruity aroma with mineral notes and floral nuances. In the mouth it is velvety, where you can detect the presence of silky tannins and a slightly bitter and lingering taste.
