Description
Maestro Sierra Palo Cortado is a fortified wine of mixed ageing and crianza, which begins its life as a fino under a veil of flor and culminates with an oxidative ageing similar to that of an oloroso. The wine is made from 100% Palomino grapes, one of the most outstanding varieties in the production of sherry wines. It has an alcohol content of 20%, which gives it a robust and complex character. It is aged in American oak casks, which contributes to its unique organoleptic characteristics.
Winemaking
The winemaking process begins with a base wine that is initially aged under a veil of flor, which gives it delicacy and freshness. Subsequently, it undergoes oxidative ageing, where it acquires body, volume and greater aromatic complexity, becoming a wine of a bright mahogany colour with coppery reflections. This Palo Cortado is considered an almost legendary wine due to its unpredictable evolution, the result of the intervention of the foreman who detects different qualities during the tasting.
Taste
Maestro Sierra Palo Cortado stands out for its breadth, balance and elegance. On the nose, it offers a combination of delicate aromas reminiscent of the ageing of an amontillado, with hints of dried fruits, notes of vanilla and toasted cocoa. On the palate, it has the roundness and volume typical of an oloroso, resulting in a long, enveloping and very structured wine. Its flavour goes perfectly with game meats, highlighting its unctuous and persistent character.
