Description
Domaine Rolet Arbois Savagnin Ouillé is a white wine that comes from the Jura region in France. This wine is made exclusively from the Savagnin grape variety, which is a very old variety that has given rise to other grapes over the centuries, such as Chenin Blanc. The plots where this wine comes from are located in the places called 'Gaillard' and 'Château Gimont', in Montigny-lès-Arsures, and they are planted in grey marls, a type of soil characteristic of the region.
Winemaking
After manual harvesting, the grapes are pneumatically pressed and cold static racking is carried out. Alcoholic and malolactic fermentation takes place in French oak barrels, where the wine remains in contact with its lees for 9 months.
The term"ouillé" in Jura refers to the fact that the barrels are filled with wine to avoid the oxidative character and the appearance of the veil flor that is characteristic of classic Jura wines. Almost all modern Jura whites are made in this way.

Domaine Rolet Arbois Savagnin Ouillé has a fresh and vibrant taste. Prominent notes of wild lemon, pear skin and green herbs glide across the saline palate, accompanied by a subtle linseed and leesy background that extends into a long finish. This wine has remarkable tension and energy.
