Description
Consciència Còsmica is a very special red/pink wine with personality, because it is made for a specific purpose, as it pays homage to the Carinyena Gris grape.
It comes from vineyards located 600 metres above sea level, nourished by sandy granitic soils, where organic and biodynamic agriculture is the main policy in the planting and harvesting of the fruit.
Elaboration
Following Salvador Batlle's philosophy, organic agriculture is the starting point for the production of this wine, where biodynamic treatments based on plant infusions are also applied.
In addition, the lunar phases are taken into account in the cultivation and harvesting of the grapes. The latter is carried out when the fruit reaches its optimum ripeness, using manual techniques that guarantee the integrity of the fruit.
On arrival at the winery, the grapes destined for the production of Còsmic Consciència Còsmica wine are macerated with the skins and a portion of the stems for a period of 8 days.
Then, the grapes are subjected to a gentle pressing process to ferment using indigenous yeasts. This process is carried out in stainless steel tanks.
Finally, the wine is aged on fine lines and then bottled without fining or filtering.
Taste
The Consciència Còsmica wine has a particular fruity and floral fragrance that combines in a balanced way with herbaceous touches. It is fresh and grainy with a long finish and a very marked acidity.

The Consciència Còsmica wine has a particular definition as it was created to pay homage to the cycle that exists between the farmer and the end consumer. It is perfect for pairing with fish, sushi or any aperitif of this type.
