Description
Codorníu Non Plus Ultra is not just a Cava; it is a declaration of principles. Born in 1897 as the first brut nature Cava in Spain, this emblematic sparkling wine continues to set milestones more than a century later by becoming the first organic Reserva with 18 months of ageing. Its history is closely linked to tradition and commitment to the land, in the Penedès region, the heart of the Cava DO. There, on calcareous-clay soils and under the influence of the Mediterranean climate, the traditional varieties Macabeo, Xarel.lo and Parellada are cultivated in a sustainable way. In a recent vintage, the Codorníu team decided to delay the harvest, assuming the risk of rain, in order to achieve a more precise ripeness. This commitment to excellence defines its character.
Winemaking
The vinification of Codorníu Non Plus Ultra begins with a manual and selective harvest, followed by a gentle pressing to obtain only the free-run juice. The first fermentation is carried out in stainless steel tanks, preserving freshness and aromatic precision. The base wine is then bottled for the second fermentation in the bottle, following the traditional method. The Cava rests for a minimum of 18 months on its lees, developing complexity, structure and finesse. With no added sugar at disgorging (Brut Nature), Codorníu Non Plus Ultra is presented in its driest and most honest version, with organic certification that reinforces its respect for the environment.
Taste
To the eye, Codorníu Non Plus Ultra has a pale golden colour with bright reflections and fine bubbles. On the nose, it displays aromas of ripe citrus fruits - grapefruit, orange peel - along with notes of toasted bread, brioche and a slight background of dried fruits. There are also subtle hints of green apple and touches of soft honey. On the palate, Codorníu Non Plus Ultra is dry, with a vibrant acidity that brings freshness and balance. The ageing on lees is perceived in its creamy texture and long finish, where notes of biscuit, candied citrus and a mineral echo intertwine. A sober, elegant Cava with a classic, uncompromising personality. Ideal on its own or with seafood dishes, carpaccios or salads with dried fruits and nuts.
