Description
In the heart of the Mâconnais, where Burgundy becomes more open and less solemn, Château Fuissé operates as if each hillside were a small world of its own. It is no mere pretence: its vineyard is divided into over 100 plots, and this obsession with understanding each ‘climat’ has defined the Vincent family’s style generation after generation. Antoine Vincent, now at the helm, made a decision as typically Burgundian as it is bold: not to seek easy volume, but to refine the voice of his clay-limestone and blue marl soils, even when that means letting the wine speak with more salt than fragrance. In Saint Véran, “so close to its great neighbour” that the old-timers used to say the area “churns butter”, the 100%Chardonnay gains structure and drive thanks to the marl and a chalky minerality.
Production
At Château Fuissé Saint Véran, the grapes are hand-harvested and brought to the winery with the utmost care during transport. The whole bunches are pressed gradually in a pneumatic press to avoid harsh extraction; the must is then settled in stainless steel tanks by static decanting (for around 12 hours) to separate the clear juice from the coarse lees. Alcoholic fermentation begins with indigenous yeasts, and the wine is transferred to barrels in the estate’s Cava cellars. This is where the Fuissé hallmark comes in: ageing on lees with stirring to develop texture (that noble ‘richness’) and complexity, and malolactic fermentation is usually carried out in full depending on the balance of the vintage. If necessary, it is clarified with bentonite and very lightly filtered before bottling.
Taste
At Château Fuissé Saint Véran, the colour is pale yellow with greenish highlights. The nose offers ripe fruit without excess: peach, fresh apple, citrus and a hint of white flowers, all against a crisp mineral backdrop. On the palate, it is full-bodied but not heavy: it enters richly and roundly, and immediately tightens with a crisp acidity. The blue marl provides structure; the limestone, salinity and precision. The long finish leaves a mineral trail—almost like damp chalk—that invites another sip and makes it a gastronomic white wine, perfect with seafood, sushi or spicy starters.
