The NV Manzanilla San Leon Clasica produced with Palomino grapes and aged for 60 months under a yeast veil (flor), has a light straw color, a powerful nose with a strong imprint from the yeast, notes of hay and straw, marine and flowery. The palate is light- to medium-bodied, really fine, clean, intense and pungent, ending with some bitter almond notes. Drink 2013-2014.

Description
Argüeso Manzanilla San León is one of the most representative wines of Bodegas Argüeso, a winery founded in 1822 in Sanlúcar de Barrameda, Cádiz, with more than 250 years of soleras. This fortified wine is made exclusively from the Palomino Fino grape variety (100%), grown in the vineyards of the Sanlúcar de Barrameda region, where the soils are mostly albariza, a soil rich in limestone that contributes to the freshness and minerality of the wines.
Winemaking
After the harvest, the grapes are pressed and the must is fermented in stainless steel tanks at a controlled temperature of 25°C. After fermentation, the wine is aged until it reaches 15% alcohol, after which it is incorporated into the criaderas and soleras system, a traditional technique that allows the gradual blending of young wines with older wines. Biological ageing under the veil of flor lasts approximately 6 to 7 years. During this time, the veil of flor protects the wine from oxygen, developing its unique characteristics: complexity, salinity and sharp notes.
Taste
In terms of its organoleptic profile, Argüeso Manzanilla San León has a clean, bright golden straw colour. On the nose, it offers a medium-high aromatic intensity, with hints of yeast, chalk and a minerality typical of the albariza soils. On the palate, it is a dry wine, with a marked saline and iodised character, very complex and persistent. The finish is long and balanced, with notes of bitter almonds and oceanic nuances that evoke its origin by the sea.
