Description
AMI Pommard is a reserve red wine made exclusively from the Pinot Noir grape variety under the Pommard appellation.
The Pinot Noir grape is a star variety and comes from old organic vineyards planted on clay and limestone soils.
These vineyards have been cultivated using certified organic farming techniques with biodynamic treatments to guarantee the natural balance of the terroir.
Winemaking
The grapes are harvested by hand, selecting the best grapes. The grapes are then fermented with indigenous yeasts in open stainless steel tanks at a controlled temperature (32 °C).
This wine is aged for 18 months, 25% of the wine in new French oak barrels and the remaining 75% in used barrels.
At the time of bottling, no fining, filtration or additives are carried out with the main objective of creating a quality wine.
Taste
AMI Pommard is a soft red wine with fragrant fruity aromas, with notes of leather and subtle spicy hints. The palate is generous, warm and delicate. A wine with soft tannins and a refreshing acidity with a persistent and elegant finish.
