The 2020 Albillo Real was produced with grapes from old vineyards in Cadalso de los Vidrios that were planted by the grandfather of one of the members of the team. It fermented in barrels, where the wine matured for nine months. It has 14% alcohol and a pH of 3.33 and 5.65 grams of acidity. Tasting this next to the 2021, it's clear that this is wider and riper, corresponding to a slow ripening of the grapes, which results in more voluptuousness in the wine, and there's more honeyed and waxy notes, hints of pollen and chamomile. 1,580 bottles were filled in August 2021.

This white wine originates from Albillo grapes, coming from three vineyards located in Cadalso de los Vidrios, with an average age of 95 years. These grapes are harvested by hand, ensuring a high quality selection.
Winemaking
The elaboration of 4 Monos Albillo Real follows a traditional and respectful process with the terroir. The grapes are pressed whole, maintaining their original structure and characteristics. Fermentation is carried out with wild yeasts, which contributes to the complexity and authenticity of the wine's flavour. The wine is then aged in used 300 and 500 litre barrels for 10 months, giving it a crystalline texture and rich aromas.
Taste
The taste of 4 Monos Albillo Real is an amalgam of exotic and complex notes. It has a light golden colour and a mineral and spicy bouquet, with hints of yellow plum, almonds, smoke, lime blossom and camomile. On the palate, it surprises with a soft and not very pronounced acidity, revealing mineral flavours extracted from granite, pear, walnut and again lime blossom, complemented by a touch of honey and a stony sensation in the aftertaste. This flavour profile makes it particularly interesting to pair with dishes such as sea bream and grilled asparagus.
