Description
Étienne Calsac belongs to a new generation of vignerons who have put the small producer back on the Champagne map. The grandson of winegrowers, he took over the family plots in Avize, mainly in the Côte des Blancs, and since 2010 he has been making wines with their own identity, ecological sensitivity and a deep respect for the terroir. Étienne Calsac Rosé de Craie is born from his concern to create a rosé Champagne that does not renounce the mineral and tense soul of his Blanc de Blancs. He uses a base of Chardonnay from L'Échappée Belle, complemented by 10% Pinot Noir from Vertus, in the Côte des Blancs, where the chalk is almost at ground level. The idea is not to show a fruity, sweet-toothed rosé, but a restrained, elegant and mineral expression. A rarity in its production, with low yields and meticulous ageing.
Winemaking
Étienne Calsac Rosé de Craie is a rosé d'assemblage: the Pinot Noir is incorporated as a still wine before the second fermentation in the bottle, integrating naturally with the chalky character of the Chardonnay. Reserve wines are used and the tirage is carried out with indigenous yeasts. Ageing on the lees lasts between 18 and 24 months, in search of texture, complexity and a fine, creamy bubble. The dosage is Extra Brut (3 g/l), respecting the natural tension of the wine.
Taste
Visually, Étienne Calsac Rosé de Craie is subtle: pale pink with coppery glints. On the nose, it displays notes of fresh red fruit - raspberry , sour cherry - wrapped in a layer of wet chalk, citrus peel and a saline echo. On the palate, it is vibrant and straightforward: acidity sets the pace, while the bubbles crackle and the fruit remains restrained, giving way to a minerality reminiscent of white stone and dried lemon. The finish is long, saline, with notes of brioche, raw almonds and grapefruit. A serious rosé, without make-up, ideal for those looking for purity, verticality and an uncompromising expression of terroir Champagne.
