Winemaking
Pheasant's Tears wines are fermented and aged in qvevri, ancient Georgian vessels made of clay and lined with beeswax. These qvevri are completely buried underground, allowing the wines to ferment in the natural freshness of the earth. This winemaking technique dates back to 6000 BC, making it one of the oldest in the world.
Philosophy
Pheasant's Tears winemaking philosophy is based on the Georgian tradition. All their wines are fermented in qvevri, avoiding the use of oak barrels so that the authentic flavour of the grapes can shine through. Following traditional methods, the ripest bunches are added to the skins, juice and pips of the grapes for both reds and whites. The maceration time varies according to the variety and size of the qvevri, ranging from 3 weeks to 6 months.
Pheasant's Tears has been dedicated to reintroducing varieties that have not been bottled in over a hundred years, offering wine lovers a unique and authentically Georgian experience.
