Located in the village of Mtskheta, Iago's Wine, also known by the name of its founder, Iago Bitarishvili, is located in the Kartli region of east-central Georgia, near Tiblissi. This winery has been a key pillar in the revitalisation of the artisanal winemaking movement in Georgia over the last decade. Iago, together with his wife, own just over 2 hectares of certified organic vineyards, planted mainly with the Chinuri variety. This winery has the honour of having been the first in Georgia to receive an organic certificate for both vineyard and winemaking, although in 2014 they decided not to continue with the certification of their wines.
Vineyards
Iago's Wine vineyards, which cover over 2 hectares, are planted with the Chinuri variety. These vineyards are certified organic and reflect Iago's commitment to sustainable and environmentally friendly viticulture. The Kartli region is known for its ideal conditions for growing grapes, with a climate that favours optimal ripening of the Chinuri variety.
Philosophy
Iago's Wine philosophy focuses on tradition and authenticity. Iago's wines are made from a single grape variety, Chinuri. Some of his wines are made with skin contact, while others are made without it. His"skin contact" wines spend six months in contact with the skins. In Georgia, this technique of ageing wine with skins, seeds and skins is known as leaving the wine with its "mother", as the pomace "feeds" the wine. On the other hand, wines fermented without skins are said to have no "mother".
