Their 2022 Nat'Cool should not be confused with the new Nat'Cool produced here with Niepoort (called Drink Me Navarra!). This is the wine they started in 2019 according to the Nat'Cool rules invented by Niepoort. It was produced with Graciano grapes from the village of Corella that were harvested early (but nor green!) and fermented destemmed with indigenous yeasts in concrete and stainless steel. It matured in concrete and one 500-liter barrel for six months. It's juicy, fruit-driven, fresh, light and easy to drink, with 12.95% alcohol, a low pH of 3.23 and fine tannins that make it able to stand up to multiple foods. 3,650 bottles produced. It was bottled in March 2023.
