Description
If there is one wine that encapsulates the soul of Toro with a modern and accessible twist, it is San Román Prima. A red wine that, without great artifice, sneaks into the glass with an irresistible expressiveness. It is made by Bodegas y Viñedos San Román, a winery that understands the vineyard as a legacy and works it with an almost reverential respect.
Behind its elegant fluidity is 85% Tinta de Toro -the star grape of the area- and 15% Garnacha, which gives it a touch of freshness and roundness. The vines, which range in age from 10 to 50 years, sink their roots in sandy soil with clay in the subsoil, a detail that gives it structure and that seductive mineral character.
Winemaking
The vinification of San Román Prima is as natural as its essence. The grapes are fermented with indigenous yeasts, unhurried, allowing the wine to find its own way. It is then refined in French oak barrels and foudres for 14 months, a time that gives it elegance without camouflaging its fruity identity.
Taste
The first thing that jumps to the nose in San Román Prima is its vibrant cherry, followed by a floral breeze that makes it irresistibly fresh. Then, on the palate, everything flows with an enveloping smoothness. There are no edges, no excesses. Just juiciness, polished tannins and impeccable balance. At 14.5% alcohol, San Román Prima feels powerful but never heavy. It is one of those reds that you can enjoy at your leisure or let it accompany you at a lively dinner.
A wine that speaks without shouting, that seduces without cloying. And that, above all, leaves you wanting another glass.
