Description

Pheasant's Tears Poliphonia is a wine described as "harmonious chaos", a definition coined by John Wurdeman to describe this blend that combines 417 indigenous Georgian grape varieties, out of the 525 known to date. Poliphonia is a mixed planted field with 1-10 vines of each of the 417 varieties. This micro-vineyard is harvested in 3-4 stages, as the grapes ripen at different times. Thus, white, golden-green, blue, purple, grey-pink grapes are obtained at different levels of ripeness, which are finally co-fermented together. In terms of winemaking, 90% of the grapes are destemmed and the remaining 10% are fermented whole bunch. Everything is fermented naturally in buried qvevri. After a five-day maceration, the must is pressed.

Taste

Pheasant's Tears Poliphonia itself is delicious, more like a dark rosé than a red, with juicy fruit and a pleasant herbal touch. The idea behind this wine is to preserve and promote indigenous grapes, providing a reason for them to be replanted. This wine also plays energetically with the idea of Georgian folk singing; different voices at different pitches and intervals coming together in a tonal fusion. As with music, with wine you have to surrender to cultivate the message. Georgian wine seems atonal; strange in colour and peculiar in texture, but with the right food and occasion, it makes perfect sense.
