The Pazo Señorans winery, located in the heart of the Salnés Valley, in the heart of the Rías Baixas, has been proving for decades that Albariño can age gracefully. Its vineyards, with vines over 45 years old, grow on granite and sandy soils, absorbing the mineral character of the land and the Atlantic influence that defines the region.
Winemaking
Harvesting at Pazo Señorans Selección de Añada is done by hand, a detail that makes the difference. Only the healthiest clusters reach the stainless steel tanks, where the wine ferments at a low temperature to preserve its freshness. And here comes the interesting part: instead of being bottled quickly, the wine rests for more than 30 months on its lees. This long contact gives it a depth and texture that takes it away from the typical Albariño, taking it to a completely different dimension.
Taste
