Description
Pascal Doquet Champ D'Alouettes Grand Cru is a Blanc de Blancs made exclusively with Chardonnay from the prestigious terroir of Mesnil-sur-Oger, classified as Grand Cru on the Côte des Blancs. This champagne stands out for its vinification in oak foudres and its prolonged ageing on lees, which adds complexity and character. The Champ d'Alouettes plot, planted in 1980, is located halfway up the slope, benefiting from a favourable microclimate. This wine has spent 15 years on its lees before disgorging, with a dosage of 3-3.5 g/l, which classifies it as Extra Brut.
Winemaking
Pascal Doquet Champ D'Alouettes Grand Cru was partially vinified in oak barrels and enamelled steel tanks without malolactic fermentation, which preserves the natural acidity of the chardonnay. This process highlights its freshness and marked minerality, characteristic of the chalky soil of the Côte des Blancs . This wine has spent 15 years on its lees before disgorging, with a dosage of 3-3.5 g/l, which classifies it as Extra Brut.
Taste
On the nose, Pascal Doquet Champ D'Alouettes Grand Cru displays a complex aromatic palette with notes of citrus, green apple, vanilla and light hints of toast and dried fruits. On the palate, it is elegant, with lively acidity and a long, saline finish that makes it a structured, refined wine, ideal with seafood, fish or poultry in creamy sauces. The texture on the palate is silky, but maintains a freshness and liveliness that reinforce its unique character.
This champagne is a true reflection of the terroir and Pascal Doquet's biodynamic approach, combining elegance and power in every sip.
