Description
From its vineyards in O Rosal and Cambados, Lagar de Cervera is born, an Albariño that does not seek to boast, but to express with precision and purity the Atlantic soul of Rías Baixas. The winery, owned by La Rioja Alta S.A., decided to bet on Galicia in the 1980s, when few were looking to the northwest. A brave and pioneering decision that today bears fruit in wines like this one: elegant, fresh, deeply linked to their origin. The plots, bathed by the sea mist and settled on well-drained granitic soils, offer Albariño clusters that combine tension, natural acidity and varietal expression.
Winemaking
The Lagar de Cervera winemaking process begins by cooling the grapes after the harvest to preserve their freshness. The grapes are gently pressed in an inert atmosphere to avoid oxidation. The must is statically racked, and fermentation takes place at a controlled temperature, prioritising aromatic expression. Crucially, malolactic fermentation is avoided, thus preserving the liveliness of the natural acidity. Lagar de Cervera remains in contact with its fine lees, with gentle stirring, providing volume, texture and complexity, without compromising its fresh character.
Taste
Visually, it is pale yellow with greenish reflections, clean and bright. On the nose, Lagar de Cervera shows a defined profile: fresh citrus (lime, grapefruit), green apple, pear and apricot, with a subtle mineral and saline note reminiscent of the nearby sea. There are also echoes of ripe tropical fruit, such as pineapple and mango, but without overpowering its balance.
On the palate, it is agile and enveloping, with a sharp but harmonious acidity that gives structure and lengthens the finish. The ageing on the lees provides moderate smoothness and a creamy texture that is balanced by its vertical profile. The finish is long, saline, with lingering citrus notes.
Lagar de Cervera is an Albariño with nerve, Atlantic pulse and elegance. A wine for those looking for freshness with depth, perfect with seafood, fish, sushi or even soft cheeses.
