Disgorged in January 2025 with a dosage of two grams per liter, Jules Brochet’s NV Prémices (2022 base) is a blend drawn from all estate parcels and vintages—comprising 60% Pinot Noir and 40% Chardonnay—heavily anchored in the 2022 vintage (matured for 10 months on the lees) and incorporating approximately 20% reserve wine aged in foudre, dating back to 2015. It offers an expressive aromatic profile of toasted sesame, mandarin oil, warm spices, walnut and red apples. The palate is full-bodied and broad-shouldered, with appreciable concentration and texture, lifted by ripe yet vibrant acidity and a pillowy mousse, concluding with a resonant, perfumed finish, bearing the subtle patina of its élevage in oak (25% new, primarily from François Frères, Cavin and Tonnellerie de Champagne). “I remember putting grapes into the press and comparatively little juice coming out—it was very concentrated,” recalls Pierric Brochet, describing this rich and patinated cuvée. It serves as a compelling introduction to the producer’s style and, like the rest of his wines, is best enjoyed on the young side.
