Description
Garum, a wine of Bodegas Luis Pérez, is a classic and elegant expression of modern viticulture. This wine is composed of Merlot (70%), Syrah (15%) and Petit Verdot (15%), a combination that gives it a unique and distinctive identity. The viticulture practised for each variety is specific and is carried out with minimum intervention, avoiding the use of herbicides. The production varies between 3500 and 5000 kilos per hectare, depending on the year and the variety. The gypsiferous marl soils in which these grapes are grown are ideal for the adaptation of Merlot, a variety that responds surprisingly well to the climate of Cádiz thanks to the high humidity.
Winemaking
The elaboration of Garum is a careful and detailed process. The grapes are harvested by hand at night, using small boxes so as not to exceed 14 kilos. Each variety is made separately in tanks, starting with the cooling of the grapes and their selection on the table. The vatting is done by gravity, keeping some bunches whole. This process seeks to express the terroir to the maximum, with intense macerations that preserve the concentrated character of the Corchuelo estate. Malolactic fermentation begins in stainless steel tanks and ends in barrels, where the wine remains for 11 to 14 months. The barrels used are French and American oak, with an average age of 6 years.
Taste
Garum is characterised by a frank and intense flavour. On the nose, it has a medium intensity with aromas of ripe fruit, liquorice, toast and spices, liquorice, pepper, mineral, smoked, roasted, menthol and a background of scrubland. On the palate, it is dry and complex, with a medium body and polished tannins. The flavours of toast and spices, pepper, vanilla, smoke, and a correct acidity stand out. Ripe fruit, balsamic notes and a finish of good intensity complete its profile. The tasting experience is enriched by its garnet colour with a medium-depth orange rim and its clean appearance, making Garum a wine of great character and subtlety.
