Description
Since 1632, when a Carillon first appeared as a winegrower in the Puligny Montrachet registers, this family has cultivated an intimate relationship with its land. Even today, the winery still occupies the same core between the village church and the walls of the old château, the stones of which form part of the current winery. François Carillon, heir to this legacy, keeps alive a philosophy in which even the most modest wines receive the same rigour and respect as the Grand Crus.
François Carillon Bourgogne Aligoté is a declaration of principles: made from vines over 50 years old located in Puligny Montrachet and Corpeau, planted on clay and limestone soils, and from the rare golden Aligoté clone, more expressive and complex. This cuvée seeks to exceed expectations for a historically underestimated variety.
Winemaking
Harvesting is by hand, and the must that gives life to François Carillon Bourgogne Aligoté is pumped directly into barrels, where it ferments and ages for about a year. The use of oak is restrained (10% new wood), and is subtly integrated, allowing the varietal freshness and minerality of the terroir to express themselves clearly. François works this wine as if it were a Premier Cru, focusing on purity and precision.
Taste
Deep golden in colour, François Carillon Bourgogne Aligoté shows a clean, vibrant nose: lime, pink grapefruit, white stone fruit and a tropical whisper. The palate is taut and agile, with lively acidity supporting its backbone. The mid-palate offers moderate volume, with a defined but not fatty texture. The finish is short, saline and crisp, inviting the next sip. This Aligoté by François Carillon, far from being a light white wine, shows character, minerality and a cutting freshness that make it ideal as an aperitif or to accompany seafood or Japanese-inspired cuisine.
