Description

Château de Béru Chablis Côte aux Prêtes is born from a place steeped in history and stone. At the top of a gently sloping hill, facing west and swept by a constant wind, lies the "Côte aux Prêtres" plot, so called because of its proximity to an ancient pilgrimage route to Vézelay, on the way to Santiago de Compostela. Here, the Chardonnay vines take root in soils of Kimméridgien limestone debris, loaded with marine fossils and minerals that mark the unique character of the deepest Chablis.

The Château de Béru, with a history going back centuries, was rescued by Athénaïs de Béru, who took up the challenge of bringing the family vineyard back to life by opting for Demeter-certified biodynamic viticulture. He rejected the use of synthetic products in favour of a more lively and respectful cultivation of the land, seeking to reflect the pure energy of the terroir in each bottle. The Château de Béru Chablis Côte aux Prêtes cuvée represents this philosophy: a wine that speaks of the soil, the climate and the mineral silence of the region.

Winemaking

Château de Béru Chablis Côte aux Prêtes is harvested by hand, carefully selecting each cluster. The grapes are gently pressed before undergoing spontaneous fermentation with indigenous yeasts. The wine is aged for several months on its fine lees in used oak barrels, which allow it to evolve slowly without being marked by woody notes. This ageing is intended to refine the texture and reveal the wine's natural tension. Finally, Château de Béru Chablis Côte aux Prêtes is bottled without fining or aggressive filtration, respecting its integrity as much as possible.

Taste

On the nose, Château de Béru Chablis Côte aux Prêtes is discreet but profound: notes of chalk, wet stone, citrus peel and barely hinted white flower. With air, it opens slowly towards water pear and fresh quince, but always under the dominance of minerality. The palate is taut, sharp and saline, with a vibrant energy reminiscent of sea and rock. The finish is long, dry and marked by an almost ascetic purity, leaving a trace of powdered limestone and vertical freshness.
