The sparkling white 2020 Taïka was produced by the ancestral method of finishing fermenting in bottle rather than provoking a second fermentation in bottle. It feels very young and undeveloped, with a fruit-driven nose and a harmonious palate with abundant bubbles and high acidity. The wine fermented partially in oak barrels and does not have varietal character (it's a blend of Sauvignon Blanc and Semillon). It has notes of white fruit and flowers, quite fruit-driven, primary and unevolved. It's quite a cerebral sparkling wine, intellectually rewarding. 3,400 bottles produced.
