Description
The red wine Cascina Tavijn Ottavio has its roots in the Piedmont region of Italy. This wine stands out for being 100% Grignolino, an indigenous variety that reflects the essence and tradition of the area. The grapes for this wine come from scattered plots in the steep hills of the Monferrato area of Asti, near Verrua's hometown of Scurzolengo, where the predominant soils are sand, silt and limestone.
Winemaking
The Verrua family farms organically, tending and harvesting the vines entirely by hand, which guarantees meticulous attention to every detail. The grapes are destemmed and the berries are kept whole. Fermentation with indigenous yeasts takes place in closed stainless steel tanks with a small proportion of must at the bottom. The maceration time with the whole grapes is 2 months(semi-carbonic maceration). After this process, the wine is aged for 8 months in tanks before being bottled unfiltered and without the addition of sulphur. A distinctive detail is that Ottavio is named after Nadia's father and the portrait is hand drawn by the artist and family friend Gianluca Cannizzo.
Taste
Cascina Tavijn Ottavio has a slight initial effervescence that quickly disappears. The notes are deep and complex: hints of blood orange, cherry, earthy touches, rhubarb, graphite, raspberry and an undertone of dried herbs. With a medium to long finish, the wine proves to be exceptionally good, leaving a lasting impression on the palate.
