The grapes for the 2023 Ollos Tinto were picked September 12 to 13 and fermented with 20% full clusters, the rest hand-destemmed. He's extending the maceration, around 40 days, a little more every year. The blend is approximately 40% Caíño Longo, 20% Brancellao and the rest all the red grapes from Ribeiro. The wine has a ruby color, a very expressive and perfumed nose with notes of wildflowers, berries and herbs and a medium-bodied palate, with fine tannins and bright flavors.

Free-run fermented with indigenous yeasts (70% of the grapes destemmed) and a skin soaking of 25-30 days. Aged for 10 months in used 500-litre French oak barrels. Bottled unfined, unfiltered and without added sulphites.
