Winemaking
Malolactic fermentation in barrels. Aged for 14 months in French oak barrels.
Description
In the heart of Bierzo, where the ancients knew how to identify the soils that produced the deepest wines, is Finca Areixola : a century-old vineyard, planted in goblet and with a traditional density that defies modern demands. Here, the only footprint on the land is that of the winegrower: no machinery, no shortcuts. The Mencía, grown in slate and quartz soils, expresses itself with an authenticity born of rigour and respect for tradition. Pittacum recovered this place not to tame it, but to listen to it. The result: Pittacum Aurea, a wine that condenses landscape, history and character, with a clear desire to show the deepest and most elegant side of the Mencía from Bierzo.
Winemaking
Pittacum Aurea is harvested by hand in small 12 kg boxes. Each bunch is selected by hand and crushed without destemming. Fermentation is carried out in stainless steel tanks, with punching down and gentle pumping over for 15 days. Afterwards, a prolonged maceration of 20 days allows the extraction of structure and complexity. Pittacum Aurea is then transferred to new French oak barrels (220 L), where it undergoes natural malolactic fermentation in the spring. It remains there for 14 months without racking, at rest, and then for a further two years in the bottle.
Taste
Deep red with garnet hues, the Pittacum Aurea offers an elegant nose, where ripe red fruit -cherry, raspberry- mingles with graphite, dried leaves and hints of damp earth. The ageing contributes subtle notes of bitter cocoa, clove and a very fine smoky touch.
On the palate Pittacum Aurea is taut, structured, with a lively acidity that sustains the wine and projects it long on the palate. The tannin is firm but polished. The mineral background and slight bitterness on the finish evoke the slate soil. It is a serious, deep wine, with a restrained elegance that reveals itself over time. Perfect for red meats, game or stews, and for those who are looking for wines with character and soul.
