The grapes are harvested by hand, selecting the bunches in the vineyard. In the winery, the grapes macerate with their skins in the press for about 8 hours. At the end of fermentation in new French oak vats and barrels, the wine rests for 3 months in the same barrels, with two battonages per week. After this time it is bottled after being cold stabilized. The total production of this wine does not exceed 1000 bottles.
