The more radical 2016 Brutal!!! is different each year; it started in 2010, and each year is selected from different lots, often with higher volatile acidity. It had a very long fermentation in used oak barriques, a fermentation that lasted for two years, during which time volatile acidity goes up, but then it's kept and sold three years after the harvest, when the volatility is more integrated. It's not a wine for everybody. There are two or three barrels of this, depending on the vintage, so 600 to 800 bottles. This same style of wine is produced by some 15 different producers that also use the same name.

Cold soaking for 7 months in clay jars before spontaneous fermentation.
