Description
From the heart of the Jura, in Arbois, comes L'Octavin Hip Hip Jura Savagnin, a wine that is both a manifesto and a celebration. Alice Bouvot, the restless oenologist and soul behind Domaine de l'Octavin, founded her project in 2005 after training in Bordeaux and Dijon. But it was in contact with the land that she found her truth: a viticulture without ties, without make-up, deeply connected to the life cycle of the vine. By embracing biodynamic practices and minimal cellar intervention, he has become a radical and luminous voice of the natural Jura. This Savagnin comes from old vines planted on blue marl and limestone soils, typical of Arbois, where the cool, seasonally marked continental climate shapes the tense, precise acidity that characterises the wine. The name "Hip Hip J" is not just a game: it is a shout of jubilation for the Jura, a raw and vibrant toast.
Winemaking
L'Octavin Hip Hip Hip Jura Savagnin is made exclusively from Savagnin grapes, harvested by hand and macerated with whole bunches for two months, which gives structure, grip and a deep golden colour. The must then ferments spontaneously and is aged for a year in stainless steel tanks. It then spends a short time in old wooden barrels, which provide micro-oxygenation without marking the wine with ageing notes. It is not filtered, clarified, sulphur is not added, nor is it corrected with additives. It is a naked wine, bottled in September, with no safety net.
Taste
What emerges in L'Octavin Hip Hip Jura Savagnin is an electric, textured, slightly cloudy, bright amber-coloured wine. On the nose, it unfolds with notes of candied mandarin, lemon zest, dried flower and a volatile point that announces its free character. The palate is juicy, direct, with a cutting acidity that cuts through the palate like a citrus blade, leaving a trail of saltiness, green walnut and apple peel. There is a vibrant tension, a lovely, almost rebellious rusticity, evoking the purity of the Jura at its most visceral. This is not an easy wine: it is an experience.
