The Trousseau 2018 Plein Sud feels light and has a delicate nose of cherries with an earthy hint, and I was surprised to find out that is has 15% alcohol. This comes from the biotype of Trousseau called à la Dame, which has looser bunches and is generally accepted as better quality. The wine is ripe and has fine and round tannins. I also tasted a sample from amphora, also from ungrafted vines, that felt funkier and had a touch of volatility and some gas. It's still unclear if he will bottle them separately or make a blend of the different components.

Spontaneous alcoholic fermentation with indigenous yeasts in tronconic vats of 500 litres and bunches destemed by hand. Minimum ageing of 1 year in French oak demi-muids (500 litres). Unfiltered, unclarified and no added sulphites.
